Chicken Pesto Pasta

A pasta perfect recipe that blends pesto and pasta together perfectly.

Looking for an easy yet delicious recipe for dinner? This chicken pesto pasta is a family favorite. A happy accident created when I couldn't find ingredients and had a wedding shower to get to, this recipe can easily be modified to fit several occasions and flavor palettes. And it pairs perfectly with rosemary sourdough bread.

Ingredients

  • 4-5 chicken breasts
  • 1 pound (16 ounces) pasta (you can make your own with this recipe)
  • 7-8 ounces pesto
  • 7-8 ounces feta cheese
  • 2-3 ounces sliced black olives (optional)
  • 4-6 slices bacon, chopped (optional)
  • 1 tomato, chopped (optional)
  • 1/3 cup olive oil
  • 1 Tablespoon garlic powder
  • 1 Tablespoon oregano
  • 2-3 teaspoons pepper
  • 2 1/2-3 1/2 teaspoons sea salt

Instructions

  • Drizzle ~1 Tablespoon of olive oil in a 9X13 pan.
  • Season chicken breasts with garlic powder, oregano, 1-2 teaspoons pepper and 1 1/2-2 teaspoons salt.
  • Place seasoned chickens in pan and bake  at 400 F for 30 - 40 minutes depending on size of chicken breasts (or bake in an instapot for 8-9 minutes at high pressure)
  • While the chicken is baking, prepare the bacon and boil the pasta.  To boil the pasta, bring a pot of water to boil and season with ~1 teaspoon pepper, ~1 teaspoon sea salt, and 1-2 teaspoons of olive oil.  Boil until pasta is al dente.
  • While pasta boils, place the strips of bacon in a frying pan and cook to desired crispiness (~6-7 minutes). Chop bacon.
  • Shred the baked chicken into half inch pieces.
  • Drain the pasta.
  • Toss the chicken, pasta, feta, remaining olive oil, olives, bacon, and tomatoes and place into serving dish.
