Ingredients
Ingredients for the Dough
- 3 cups All-Purpose Flour
- 1 teaspoon kosher salt
- 1 teaspoons baking powder
- 1 teaspoon) baking soda
- 2 teaspoons cinnamon
- 2 teaspoons ginger
- ½ teaspoon ground cloves
- ½ teaspoon allspice
- ½ teaspoon cardamom
- ½ teaspoon nutmeg
- ¼ teaspoon black pepper
- 1 ½ cups brown sugar
- 1 ½ cups granulated sugar
- 8 Tablespoons (1/2 cup) softened butter
- 1 cup pumpkin puree
- 4 teaspoons vanilla extract
Ingredients for the Icing
- 2 cups powdered sugar
- 2 teaspoons ginger
- 2 teaspoons cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon allspice
- ½ teaspoon cardamom
- ½ teaspoon nutmeg
- ¼ teaspoon black pepper
- 1 teaspoon chai tea (optional)
- 2 teaspoons vanilla extract
- 8 Tablespoons heavy cream (can substitute half and half for cream or replace 2 Tablesoppons of cream with maple syrup of Whiskey for fun variations)
- ½ teaspoon salt
Instructions
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper (or grease a pie pan).
- In a large bowl, whisk together flour, sugar, salt, baking powder, baking soda and spices.
- Gently add the pumpkin puree and vanilla to the mixture.
- Bake at 350 F for ~12 minutes.
- While cooling, combine the icing ingredients, and once cookies are cooled, ice.
