Pumpkin Chai Latte Cookies

To celebrate the season and the release of everything pumpkin spice at Starbucks, try this pumpkin chai cookie recipe inspired by the new Pumpkin Cream Chai Tea Latte.

To celebrate the season and the release of everything pumpkin spice at Starbucks, I created this recipe inspired by the new Pumpkin Cream Chai Tea Latte.  And it pairs perfectly with all the Starbucks pumpkin lattes!

  • Parchment paper
  • Cookie dough scoop

Ingredients

Ingredients for the Dough

  • 3 cups All-Purpose Flour
  • 1 teaspoon kosher salt
  • 1 teaspoons baking powder
  • 1 teaspoon) baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon allspice
  • ½ teaspoon cardamom
  • ½ teaspoon nutmeg
  • ¼ teaspoon black pepper
  • 1 ½ cups brown sugar
  • 1 ½ cups granulated sugar
  • 8 Tablespoons (1/2 cup) softened butter
  • 1 cup pumpkin puree
  • 4 teaspoons vanilla extract

Ingredients for the Icing

  • 2 cups powdered sugar
  • 2 teaspoons ginger
  • 2 teaspoons cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon allspice
  • ½ teaspoon cardamom
  • ½ teaspoon nutmeg
  • ¼ teaspoon black pepper
  • 1 teaspoon chai tea (optional)
  •  2 teaspoons vanilla extract
  • 8 Tablespoons heavy cream (can substitute half and half for cream or replace 2 Tablesoppons of cream with maple syrup of Whiskey for fun variations)
  • ½ teaspoon salt

Instructions

  • Preheat oven to 350°F. 
  • Line a baking sheet with parchment paper (or grease a pie pan).
  • In a large bowl, whisk together flour, sugar, salt, baking powder, baking soda and spices. 
  • Gently add the pumpkin puree and vanilla to the mixture.
  • Bake at 350 F for ~12 minutes.
  • While cooling, combine the icing ingredients, and once cookies are cooled, ice.
