Chicken Salad
This chicken salad recipe is perfect for any fete, from picnic to afternoon tea!

I love gathering with my girls, and when I do, one of the recipes that's usually on the menu is this crisp and creamy chicken salad.
Easy to make, this recipe can easily be modified based on what you have fresh on hand or for dietary restrictions. It’s a favorite for showers, book club, teas, and picnics.

Equipment
- One large bowl
- One medium sized bowl
- Large spoon (or dash of glam, serve in these coupe glasses with these gold utensils and flatware)
Ingredients
- 4 pounds chicken (~4 cups)
- 1 cup mayonnaise
- 2 celery ribs, chopped
- 1 cup seedless grapes, strawberries, or cranberries (optional)
- 1 cup almonds, walnuts, or pecans, chopped (optional)
- 3 scallions, chopped (optional)
- 2 Tablespoons dill (optional)
- 1 Tablespoon parsley (optional)
- 2-3 Tablespoons
- 1 Tablespoon mustard
- 1/2 teaspoon ground pepper
- 1 teaspoon salt
Instructions
- When in a hurry, I pick up pre-cooked shredded chicken, but if cooking the chicken from scratch, rub the breasts in olive oil, sprinkle with salt and pepper, and bake at 45-55 minutes at 350 degrees F in a glass dish, then shred.
- Once the chicken is cooled, in a large mixing bowl, combine the chicken, fruit, nuts, celery, scallions, dill, and parsley.
- In a small bowl, mix the mayonnaise, lemon, mustard, salt, and pepper.
- Add the mayonnaise mixture to the chicken mix and combine.
- Cover with plastic wrap and chill for 1 hour.
