Key Lime Pie Cookies

It's hard to find a tast more full of summer than Key Lime Pie - A cool, rich tang blended with buttery graham perfect for sunny days and sandy beaches. Key Lime pies are one of my favorite summer sweets so I set out to see if I could covert that flavor into coofie form, and I am obsessed with the resulting recipe. If you are a key lime junkie, too, then this cookie is for you.

- 1 large bowl
- 1 medium bowl
- measuring cups
- stand mixer
Ingredients
- 1/2 cup butter, unsalted and room temp (+ 3 Tablespoons melted butter)
- 3/4 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 cup flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking soda
- 3/4 cup white chocolate chip
- 3/4 cup graham cracker pieces
- 1/2 graham cracker crumbs
- 5 Tablespoons key lime juice
- zest of 1 key lime
Note: I wanted a true key lime flavor, but if you prefer a lighter key lime flavor, you can reduce the juice added to 2-3 Tablespoons. If you do, you can also reduce the flour 1/4 cup.
Instructions
- Preheat the oven to 350 degrees F
- Cream the 1/2 cup butter and sugar together in the stand mixer
- Add the egg , vanilla, key lime juice and zest to the mixer and combine..
- In a separate bowl, combine the dry ingredients.
- With the mixer on low, add the dry ingredients gradually to the mixer.
- Gently fold in the chocolate chips and graham pieces and combine for ~ 30 seconds.
- In a small bowl, combine the graham crumbs and 3 Tablespoons butter
- Scoop a ball of dough and dip it into the small bowl of crumbs so the crumbs cover the bottom half of the cookie (the cookie will expand as it cooks, so you want to ensure you coat the cookie along the sides).
- Place the cookie dough balls on a cookie sheet lined with parchment and bake for 11-14 minutes or until lightly golden.
- For a little extra fun, you can add a dollop of whipped cream or drizzle with icing.
This fun and whimsical recipe is a wonderful addition to summer parties and picnics. Filled with refreshing citrus and warm graham cracker flavor, this pint sized cookie packs all the punch of a pie. Now you can have your pie and cookie and eat them, too!
