Lemon Lavender Shortbread
Smell the fragrant flavors with this lemon lavender shortbread.

Thistles are in bloom! They always make me think of trips to Scotland. That, along with their vibrant color, inspired me to make lemon lavender shortbread this week. And, given their heritage, you can of course, spice thme up with a touch of bourbon like I did with my bourbon shortbread.

Equipment

- 1 medium
- 1 small bowl
- Baking sheet (or muffin tin)
- Parchment paper
- Biscuit cutter
- Rolling pin
- Measuring cups
Ingredients
For the shortbread
- 1 cup sugar (for finer shortbread, you can substitute powdered sugar)
- 1 1/2 cups unsalted butter (3 sticks), softened
- 3 1/2 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1 Tablespoon corn starch (optional, but good for helping cookies hold their shape)
- 4 Tablespoons lemon juice (juice of 1 lemon; can substiture 1 1/2 teaspoons lemon extract)
- zest from 1 lemon
- 1 1/2 teaspoons culinary lavender
For the icing (optional)
- 1/2 cup powdered sugar
- 1 1/2 Tablespoons lemon juice
- 1 Tabllespoon lemon zest
Instructions
- Preheat the oven to 350 degrees F
- In a mixer, blend the butter and sugar on high for ~ 1 minute.
- Add the lemon juice, zest, and lavender and blend.
- In a separate bowl, mix together the flour, baking powder, salt, and cornstarch then add to the butter mixture and combine.
- On a lightly floured surface, roll out the dough to `1/4 inch thickness and cut/shape the cookies (cookie cutters, stamps, etc.) I love these Nordic Ware stamps.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for 12 to 14 minutes.
- While cookies bake, prepare the icing by combining all ingredients.
- Once cookies cool, lightly ice ach cookie as desired.
These delicate cookies remind of summer with their pretty little pops of purple and blend of citrus and floral flavors. I hope they add a pop of color to your summer festivities!
