Mardi Gras Season always makes me think of my time in Louisiana. Cities closed down for the parades and celebrations... and the FOOD! Gumbo, étouffée, King Cake in al the flavors! So this time of the year, I get a little inspired to play with those flavors. This recipe is a simple one, adding the taste of pralines to a chocolate chip cookie.

Equipment
- 1 small bowl
- 1 medium bowl (I love these Casafina cereal bowls and this Casafina stoneware mixing bowl set)
- electric mixer
- baking sheet
- parchment paper
Ingredients
- 1 1/2 cups butter, softened
- 1 1/2 cups brown sugar
- 3/4 cup granulated sugar
- 1 1/2 teaspoons vanilla
- 3 eggs
- 1 1/2 cups cake flour
- 3 cups flour
- 1 1/2 teaspoons cornstarch
- 1 1/2 teaspoons sea salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 Tablespoons molasses
- 2 1/2 cups chocolate chunks
- 2 cups praline pecans
- 1/2 cup pecans (roasted, but not sugared)
Instructions
- In your mixing bowl, cream together the softened butter and sugars.
- Add eggs and vanilla and combine.
- In a separate bowl, combine the dry ingredients then gradually add to the butter mixture while mixing on low.
- Chill the dough in the refrigerator for about 30 minutes. Preheat the oven to 400 degrees F while the dough chills.

- Line a baking sheet with parchment and scoop ~1 1/2 inch balls of dough onto the prepared sheet about 2 inches apart.
- Bake for 18-20 minutes.
