Pumpkin Chocolate Chunk Cookies

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 2/3 cup granulated sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 2 1/2 teaspoons pumpkin spice (or 1 1/2 teaspoons cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon ginger, 1/4 teaspoon cloves)
  • 2 1/2 cups flour
  • 2 cups oats
  • 1 packet pecan and pumpkin oatmeal (optional)
  • 2 teaspoons sea salt, divided
  • 1 1/2 teaspoons baking soda
  • 1/3 cup salted caramel sauce, melted (optional)
  • 1 /2 cup butterscotch chips
  • 2/3 cup chocolate chunks
  • 1/2 cup pumpkin puree (patted dry)
  • 1 packet pecan and pumpkin oatmeal (optional)

Instructions

  • In your mixing bowl, cream together the softened butter and sugars.
  • Add eggs and vanilla and combine.

  • In a separate bowl, combine the dry ingredients (flour, oats, oatmeal, 1 teaspoon of the salt, pumpkin spice, baking soda) then gradually add to the butter mixture while mixing on low.
  • In a small bowl, heat the caramel sauce in the microwave for about 30 seconds and gently fold the sauce and butterscotch and chocolate chips into the dough mixture.
  • Chill the dough in the refrigerator for about 30 minutes.  Preheat the oven to 350 degrees F while the dough chills.
  • Line a baking sheet with parchment and scoop ~1 inch balls of dough onto the prepared sheet about 2 inches apart.
  • Sprinkle with remaining 1 teaspoon of sea salt.
  • Bake for 14-18 minutes.
