Pumpkin Spice Cupcakes
Creamy pumpkin goodness in a cup... a cake cup!
These rich and soft treats will delight you and your guests alike. I made them for Hocus Pocus movie night, and they put a spell on everyone!
I chose to top these with the same pumpkin spice buttercream icing I used for my snickerdoodle cupcakes, but they also pair well with maple buttercream, salted caramel drizzle and/or biscoff cookie and praline pecan crumble.

- 1 medium bowl (I love these Casafina stoneware mixing bowl set)

- Cupcake tin
- Cupcake liners

Ingredients
CUPCAKES
- 4 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 6 teaspoons pumpkin spice (or 4 teaspoons cinnamon, 1 teaspoon nutmeg, 1/3 teaspoon ginger, 1/4 teaspoon coves, 1/4 teaspoon allspice
- 1 teaspoon salt
- 1/2 cup butter, unsalted
- 2/3 cup vegetable oil
- 1 1/3 brown sugar
- 1 cup sugar
- 2 eggs
- 3 teaspoon vanilla
- 2 cups pumpkin puree
FROSTING
- 2 eight ounce packages cream cheese
- 1 cup butter
- 6 cups powdered sugar
- 1 1/2 teaspoons vanilla
- 1 1/2 teaspoon pumpkin spice
- 1 teaspoon maple syrup
- 1/4 cup finely chopped praline pecans and biscoff cookie crumbs to top (optional)
Note: You can top these in so many ways - salted caramel, mini chocolate chips, mini Reese’s chips, etc.
Instructions
- Preheat the oven to 350 degrees F.
- Line the cupcake tin with cupcake liners.
CUPCAKES
- In a mixing bowl, combine the dry ingredients and set aside.
- In your electric mixer, cream the sugars, butter, and oil together until smooth.
- Add in the eggs one at a time while mixing on low.
- Gradually add in the dry ingredient mixture, then with a spatula gently fold in the vanilla and pumpkin puree.
- Pour the batter into the lined cupcake tin.
FROSTING
- combine all ingredients in your electric mixer. For a stiffer icing, add additional powdered sugar.
- Frost cupcakes once they have fully cooled.
- Sprinkle or drizzle with your favorite toppings (caramel, praline pecans, cookie crumble, etc.)
Tis the season to celebrate all things pumpkin. More importantly, tis the season to gather together - something I think we are all a little more grateful for.
