Pumpkin Spice French Toast
A blend of thick brioche bread, pumpkin spice, and cinnamon take this french toast recipe to the next level.
I have a weakness for breakfast food and all things pumpkin, so it may have been inevitable I'd be whipping up pumpkin spice french toast. We may have had it twice over the last two weekends. I hope your family loves this recipe as much as we do.
This recipe is similar to my recipe for cinnamon hallah, but rather than make the bread from scratch, I used Trader Joe’s pumpkin spice brioche. I also coated each brioche slice in crumbles of Churro Cinnamon Toast Crunch after dipping it in the egg and cream mixture. Delish!

Ingredients
- 8 slices brioche bread
- 3 teaspoons pumpkin spice (or 2 teaspoons cinnamon, 1 teaspoon nutmeg, 1/3 teaspoon ginger, 1/4 teaspoon coves, 1/4 teaspoon allspice
- 1 1/4 cup whipping cream
- 1 egg
- 1 1/2 teaspoons vanilla
- 1 cup Churro Cinnamon Toast Crunch cereal, smashed (any cereal will work)
Instructions
- Line a baking sheet with parchment and place your sliced bread on it.
- Whisk together the eggs, cream, sugar, salt, vanilla, and spices and pour into a shallow, wide-mouthed dish like a pie pan.
- Take 1 - 2 slices of bread and place them in the egg mixture. Allow the bread to soak in the mixture for ~ 1 min then flip the bread over to allow the egg mixture to seep into the other side.
- Return the bread slices to the parchment lined baking sheet. (Alternatively, you can put the freshly dipped bread slices directly into a heated skillet while you soak the next slices, but dipping all the slices first and then frying them allows you to toast them in quick succession so all slices remain warm when served.)
- Heat a large skillet on medium heat, then place ~1 teaspoon of butter in the skillet.
- Toast each side of the bread slice for ~ 2 minutes on each side, until golden, then flip and toast the other side. Add additional butter as needed between toasting.
- Serve topped with berries, maple syrup, powdered sugar, peanut or apple butter and/or whipped cream!
Tis the season to celebrate all things pumpkin. More importantly, tis the season to gather together - something I think we are all a little more grateful for.
