I ove red velvet cake with cream cheese frosting - so soft and buttery. This recipe kicks it up a notch with red velvet brownies, swirld with cream cheesd and topped with chocolate ganache and chocolage chips. Ingredients
Brownies
- 4 eggs
- 3/4 cup butter
- 2 cups sugar
- 1 1/2 teaspoon vanilla
- 1/3 cup cocao powder
- 1/4 teaspoon salt
- 1 1/2 cups flour
- 2 Tablespoons red food coloring
- 3/4 teaspoon white vinegar (optional - this brightens the food coloring)
Cream Cheese Swirl
- 8 ounces cream cheese, room temperature
- 1/4 cup sugar
- 1 teaspoon vanilla
- 1 egg yolk
Oreo Layer
- 1/2 cup butter, melted
- 1 package of Oreos, crushed
Chocolate Ganache
- 11.5 ounces of milk chocolate chips, melted
- 1 cup cream
- 12 ounces mini semi-sweet chocolate chips
Instructions
Cream Cheese Swirl
- In a medium bowl, whisk together the cream cheese ingredients until fully incorporated and smooth.
Brownies
- Cream the butter and sugar in the mixer, then add each egg one by one.
- In a separate bowl, combine the dry ingredients. Gradually add the dry ingredients to the mixer and incorporate on medium speed.
- Pour 1/2 the mixture into a 9x13 baker lined with foil and greased.
- Add dollops of the cream cheese mixture space ~2 inches apart throughout the red velvet surface. Using a knife, drag it through the cream cheese in a large ‘S’ shape to create a swirl.
- Top the cream cheese layer with the remaining red velvet batter.
- Bake for 42-48 minutes at 350 degrees F.
- Allow to cool before adding remaining layers.
Oreo layer
- When the red velvet brownies are nearly cool, mix the crushed Oreos (I crused mine with my rolling pin in a plastic bag) with the melted butter.
- Top the cooled brownies with this layer.
Ganache
- In a saucepan, bring the cream to a near boil on low heat.
- Pour the milk chocolate chips into the cream until melted, and allow to stand for ~ 3-5 minutes, then whisk until smooth.
- Pour the ganache over the Oreo layer.
- Top with mini choclate chips.
- Place the brownies in refrigerator for ~1 hour to allow the ganache to set-up.
TIPS & TIME SAVERS
Don’t have tons of time between work, cleaning the house and keeping up with kiddos? Here are a few shortcuts to get the same great taste in less time:
- Substitute the scratch brownies with a store bought red velvet cake mix, 1/2 cup melted butter and two eggs.
- Skip the cream cheese swirl, or top the brownies with store bought cream cheese icing before the Oreo layer.
