Salted Caramel Nutter Butter Scotchies

Loaded with salty caramel flavor, this cookie combines an amazing array of flavors to satisfy any craving.

It has been a week, and I need a cookie... one with all the things. Salted caramel, peanut butter, butterscotch - yes please.

Sorry for the later post.  The week actually started wonderfully, celebrating my husband and brother’s birthdays.  Like many of us, we got creative trying to make a birthday during a pandemic meaningful, fun and safe.  For one, an elegant steak dinner at home with all the trimmings and accoutrement, for the other celebration an outlandish At home ‘Super Soft Birthday’ inspired by one of their favorite tv series Letterkenny (think a party for a 6 year old girl who loves pink and ponies and unicorns).  So much fun and laughter.

And then, while we were worried about getting the birthday cake out of the car, someone broke into it - the financial loss and the loss of many of the birthday photos on a phone taken put a bit of a damper on the birthday memories.  (FYI - if you have to get your driver’s license replaced right now, it can take up to 2-3 months to get an appointment so plan ahead if you can).  

But we chose to focus on the positive - everyone was safe and there were some great memories and  ‘mental photos’ of the birthdays - so  much to be thankful for.  And then my mom went into the hospital and my faith and positivity took a beating.  She is doing much better thankfully, but I appreciate prayers and positive thoughts sent her way.

And so, after a week lik that, there must be cookies and comfort food.  These butterscotch oatmela cookies filled with salted caramel and Nutter Butter bits were a huge hit with my family…and with our contractors repairing our bathroom.  Oh, did I forget to mention that our upstairs master bath began leaking through the living room ceiling?  I need to pray and bake like nobody’s business right now to stay sane.

Salted Caramel Nutter Butter Scotchies

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 2/3 cup granulated sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 1 teaspoon cinnamon
  • 2 1/2 cups flour
  • 2 cups oats
  • 2 teaspoons sea salt, divided
  • 1 1/2 teaspoons baking soda
  • 1/3 cup salted caramel sauce, melted
  • 1 cup butterscotch chips
  • ~6 Nutter Butter cookies broken into bite size pieces

Instructions

  • In your mixing bowl, cream together the softened butter and sugars.
  • Add eggs and vanilla and combine.
  • In a separate bowl (I love the Corafina set pictured with the cookies), combine the dry ingredients (flour, oats, 1 teaspoon of the salt, cinnamon, baking soda) then gradually add to the butter mixture while mixing on low.
  • In a small bowl, heat the caramel sauce in the microwave for about 30 seconds and gently fold the sauce, butterscotch chips, and Nutter Butter pieces into the dough mixture.

  • Chill the dough in the refrigerator for about 30 minutes.  Preheat the oven to 350 degrees F while the dough chills.
  • Place parchment on a baking sheet, and scoop 1 inch balls of dough onto the prepared sheet about 2 inches apart.
  • Sprinkle with remaining 1 teaspoon of sea salt.
  • Bake for 14-18 minutes.
