Sprinkle Crinkle Cookies
A festive cookie that puts the fun in funfetti and the spring in sprinkle.
A few weeks ago, we celebrated birthdays in our house. Like many, we've learned to get creative to make events like birthdays and anniversaries feels special in our new normal. So there may have been a six foot unicorn sprinkler and bubble machine in the backyard... and a bright pink cake, unicorn popcorn, unicorn cupcakes, and these spectacular sprinkle crinkle cookies on the table... did I mention this party was for my husband and brother?
In a recent post, I shared that they are fans of Letterkenny, not a show I’d recommend for kiddos, and yet the inspiration for a spectacular birthday party fit for one. There were boas and crowns, shaved ice and cotton candy machines, pink sparkly tablecloths, unicorn streamers, cupcake holders, cake topper, and pinata, and balloons and drink labels from the show.
It may be one of my favorite parties yet - and might have been if we weren’t distanced from loved ones and some stranger hadn’t stolen my phone and Ian’s wallet, but I’ll always remember the pure joy I felt in the moment celebrating these two, and that’s the thing to hold on to.

- 1 small bowl (I love these Casafina cereal bowls and this Casafina stoneware mixing bowl set)
- Electric mixer
- Baking sheet
Ingredients
- 1 /2 cup butter, softened
- 1 1/4 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 1/2 cups flour
- 1/4 teaspoons salt
- 1 1/2 teaspoons baking soda
- 4 ounces cream cheese
- 1/2 cup sprinkles
- ~1/2 cup powdered sugar (to roll the dough in)
- 3/4 cup animal circus frosted cookie pieces
Instructions
- In your mixing bowl, cream together the softened butter and sugar.
- Add eggs, cream cheese, and vanilla and combine.
- In a separate bowl (I love the Corafina set pictured with the cookies), combine the dry ingredients (flour, salt, baking soda) then gradually add to the butter mixture while mixing on low.
- Gently fold in sprinkles and animal cookie pieces.
- Chill the dough in the refrigerator for about 30 minutes. Preheat the oven to 350 degrees F while the dough chills.
- Pour powdered sugar into a small bowl (big enough to roll balls of dough in).
- Place parchment on a baking sheet.
- Scoop 1 inch balls of chilled dough and roll into the powdered sugar then place onto the prepared baking sheet about 2 inches apart.
- Bake for 10-12 minutes.
