Time for Tres Leches

Sometimes you just need a little cream... a dollop in tea, a warm glass at night, a sip to dunk chocolate chip cookies. And sometimes you need a lot of cream. On those days, it's time for tres leches.
Tres leches cake is named for the three types of milk used to soak the cake : sweetened condensed milk, evaporated milk, and heavy whipping cream (or milk). Sweet and moist, this cake is delicious on its own or served with fresh fruit on a summer day.

- 2 medium sized bowls
- Mixer
- Spatula
- 9x13 baker
Ingredients
For the Cake:
- 5 eggs, separated into yolks and whites
- 1 cup sugar (divided into 3/4 cup and 1/4 cup)
- 1 1/2 teaspoons vanilla extract
- 1/3 cup heavy whipping cream (you can substitute milk)
- 1 cup flour
- 2 teaspoons baking powder
- 1 teaspoon salt
For the Soak:
- 14 ounce can of sweetened condensed milk
- 12 ounce can of evaporated milk
- 1/3 cup heavy whipping cream
For the Topping:
- 2 cups heavy whipping cream
- 2 Tablespoons sugar
- 1 teaspoon clear vanilla extract
Instructions
- Preheat the oven to 350 degrees F.
- In a large bowl, combine the dry ingredients and set aside.
- Separate the eggs, placing the yolks in your mixer and the whites in a small bowl. Set the whites aside.
- Add 3/4 cup sugar to the yolks and beat on high ~ 2 minutes until the color pales.
- Stir in 1/3 cup heavy cream and vanilla.
- Pour the yolk mixture into the dry ingredients and combine.
- Clean the mixer and pour the egg whites and 1/4 cup sugar in. and beat on high until stiff peaks form.
- Gently fold the egg white mixture into the yolk batter. Do not overmix.
- Pour the batter into a greased 9x13 baker and bake for ~ 30 minutes or until a toothpick inserted into the center comes out clean.
- Once the cake has cooled, create the soak by combining all 3 milks.
- Poke holes all over the cake using a toothpick. This will allow the cake to better absorb the cake.
- Pour the soak over the cake and allow it to chill 1 hour.
- Mix the topping ingredients to create the whipped cream topping and layer on top (You can also use store bought whipped cream).
- Top with fresh fruit and enjoy!
